Indian cooking class

On April 24th, I took a cooking class...Indian food!  This was a class that a new Tokyo friend (Susan) had registered for and there was still room for another person.  Susan asked if I would be interested in taking the class...why not!?  Hema Parekh was the instructor.  She is a vegetarian cookbook author originally from India.  We prepared the following dishes:  Dal Makhani, Cabbage, tomato and cucumber Kachumber, Makkai palak khass, Crispy baingan raita, Masala aloo aur peppers, Masala poori, Okra with besan and sesame seeds, and Spicy eggplant and onion tangles.

I never expected to take an Indian cooking class while in Tokyo, but it was a nice surprise.  We sat down to a fabulous lunch after all of our preparations.
